Almond Cookies

This is an easy to make and delicious almond cookie recipe. There are a few variations you can add to make it your own. We'll suggest a couple but we'll always encourage creativity and experimentation. We hope you love these as much as we do!
What you'll need:

1/4 cups blanched almond flour

1/2 cup cake flour

1/4 teaspoon baking soda

1/2 cup butter (at room temp)

1 egg yolk
-
2 tablespoon sugar
-
1/2 teaspoon vanilla extract
-
1/2 teaspoon almond extract
-
1/4 teaspoon salt
-
1/4 cup chopped almonds (optional for added flavor and crunch)

16 whole almonds (for decoration on top)
How to make it:

Preheat oven to 325°F

Prep cookie sheets with parchment

In a large bowl, mix butter, egg yolk (no white), sugar, almond extract, and vanilla extract until smooth

Sift cake flour, almond flour, baking soda, and salt

Combine and knead the ingredients into dough.

(Optional) Add chopped almonds and knead into dough

Refrigerate for 1 hour

Preheat oven to 325°F

Divide dough into 16 pieces. Roll each into a ball and flatten them into traditional cookie shapes or use a cookie cutter for other patterns. Decorate by adding a whole almond on top.

(Optional) Brush each cookie with egg wash (made by mixing 1 tablespoon of left over egg whites with 1 tablespoon water)

Bake for 20 minutes then let sit in warm oven for an additional 10 minutes. Transfer to cooling rack

Ready to eat when cooled
